Why fryer varnish behaves differently to ordinary grease
Frying oil doesn't just get dirty, it changes chemically. Held at 350–375°F for hours, the fatty acids oxidise and cross-link into long polymer chains, and those chains bond to the steel as a hard amber film. That is why the film survives dish soap and hot water: soap emulsifies free oil, but varnish is no longer free oil — it is effectively a resin.
Two things break that bond: heat plus caustic (the traditional boil-out) or a surfactant-and-solvent foam given enough dwell time. The boil-out works but is unpleasant, slow and hard on aluminium parts. A foaming degreaser with a 3–5 minute dwell dissolves the same film without a caustic bath, which is why it has become the default for home fryers and for the between-boil-out cleans in commercial kitchens.
The practical implication is patience, not pressure. Scrubbing a varnished pot with a scourer polishes the film and scratches the steel; letting a foam sit on it for five minutes and then brushing lightly removes it in one pass. If a patch stays amber, it needs a second coat, not more force.

Drain and wipe out the bulk oil
Empty the pot, then wipe out the remaining film with paper towel so the degreaser is attacking the bonded varnish rather than loose oil.

Foam the interior, basket and element
Coat the pot walls, the basket mesh and around (not into) the heating element. Mesh is where varnish is most stubborn.

Dwell 3–5 minutes
Varnish is more resistant than ordinary grease. Give it longer than you would a grill grate, and apply a second coat to any patch that stays amber.

A nylon brush on the mesh, a cloth on the pot. Rinse with clean water until no residue remains — this is a food-contact vessel — then dry completely before refilling.

Baskets, elements and thermostats
The basket is usually the worst-looking part and the easiest to fix: lay it flat, foam both faces of the mesh, wait five minutes and work a nylon brush along the wires rather than across them. Varnish releases as a brown slurry that rinses away. Badly neglected baskets may need two rounds — cheaper than replacing them, and far safer than a wire wheel, which opens up the mesh.
Immersion elements need the opposite approach: foam a cloth and wipe the element from the centre outward, keeping liquid away from the terminal block and the thermostat probe housing. Never submerge the control head of a home fryer, even if the pot itself is removable and dishwasher-safe.

The parts people forget
- The underside and hinge of the lid, where vapour condenses into sticky film.
